- Hi guys! We have been plagued by a horrid virus all week in our household, so I had planned a post regarding the strategies I implement to try and ward off nasty bugs… however have been too ill to even do this. So that’s next week’s post planned once all bugs have exited our bodies and house! I have instead rehashed an old favourite recipe; clean twix bars. These are much much lower in terms of sugar content than the real deal. They freeze well & can be gluten free if you need them to be.
- 1 cup rice cereal (GF if needed)
- 1/2 cup rice Malt
- 2 TBSP Almond Butter
- 1 tsp Vanilla paste
- 1 C medjool dates
- 1 TBSP maple syrup
- 1 Chp dark chocolate (high Cacao %)
- 2 TBSp coconut oil
Line a 8 inch square baking pan with grease proof paper. Don’t use a loose bottomed pan, it will leak.
Mix the almond butter | rice malt & vanilla over a low heat until combined. Once so, transfer the mixture to a mixing bowl & stir in the rice cereal – give it a good stir until nice and combined. Spread your diet layer in the baking pan. Press down with a spoon to firm. Pop this into the freezer for 5-10 minutes.
Blitz the dates & maple syrup in a food processor. Add 1-2 tbsp of almond milk if needed to make a silky texture. Grab your tray and spread the next layer on top of the cereal layer. Return to the freezer for 15 minutes.
Over a low heat melt the Chocolate & coconut oil – once again grab your tray & pour on the final layer. Freeze for a few minutes only (you won’t be able to slice it otherwise) After a few minutes remove, slice & return to the freezer until fully set.
